Vinification
The Cabernet Sauvignon fruit was harvested on October 17, 2003 at 25.2 brix. It was destemmed and crushed to small open top fermenters with an extended skin contact period. The juice was free run and press blended. The wine was aged in 100% French oak barrels for 20 months and bottled on May 21, 2005. It is unfined and unfiltered.

Tasting Notes
The 2003 Cabernet Sauvignon is soft and approachable. It has balanced mouth feel, rich berry-plum fruit flavors and a nice, dry
spicy finish. Drink now or cellar up to eight years.
