Vinification
The Cabernet Sauvignon fruit was hand harvested on September 6 and 21, 2004
at an average brix of 24.9. The fruit was placed in small open top, punch down
fermenters with skin contact lasting an average of 21 days. The wine was aged
in 100% French oak barrels (40% new oak) with medium toast for 18 months. The
wine was bottled on April 29, 2006. It is unfined and unfiltered..
Tasting
Notes
The rich, ruby color of the 2004 Cabernet Sauvignon
is complemented with lively flavors of intense boysenberry
fruit. The mouth feel is smooth and velvety with a long,
lingering finish. This wine will continue to evolve beautifully
in the bottle up to 10 years
