Grilled Herb-Marinated Chicken

Ingredients

  • 2 lbs boneless skinless chicken thighs or breasts
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh rosemary or thyme
  • Salt & pepper

Instructions

  1. Mix olive oil, lemon juice, garlic, herbs, salt & pepper.
  2. Marinate chicken in the mixture for at least 1 hour (or overnight).
  3. Grill over medium-high heat for 5–7 minutes per side until cooked through. Let rest before slicing.
